It contains no additives other than salt and every wheel is closely inspected by the Consortium to make sure the product turns out perfect as to specification. Parmigiano-Reggiano is aged for more than 20 months.
The flavour profile of Parmigiano Reggiano is highly complex. It is sharp and strong notes of dry fruits and spices. Despite all that it maintains its characteristic called "sweetness".
