In order to produce edible olives, harvested olives are cleaned and then cured in a natural brine of salt, oil, and flavorings or artificially with lye. For green olives, the salinity is increased by 2% every two to three weeks from the initial salinity of 12-14%. Use as toppings on flatbreads and pizzas etc.
